Apple cider vinegar is a superstar ingredient. It’s gut-calming, tangy, tart and versatile. It can do anything from brine your turkey to remove mold from your shower curtain. Apple cider vinegar has been used for thousands of years as a food preservative but modern medicine is uncovering research that it’s very good for our bodies.

The health claims are endless. There are some studies that show apple cider vinegar helps with weight loss and helps treat diabetes, IBS, acid reflux, the flu, and so much more.

Many doctors (and moms!) recommend taking 1 to 2 tablespoons a day for general health and wellbeing. Think of it as the new “an apple a day keeps the doctor away.” If the taste bothers you, try diluting it in 6 ounces of water or simply incorporate apple cider vinegar into your food preparation. This dressing is the perfect way to get your two tablespoons a day.

This delicate salad dressing recipe is best on a simple salad of butter lettuce and garden fresh tomatoes. The sharp vinegar flavor is met with sweet honey and neutral olive oil for something that won’t overpower the delicate lettuce. The tomato to lettuce ratio should be about 1:1 so your plate is half green and half red.

Deliciously Simple Apple Cider Vinaigrette and Butter Lettuce Salad

Serves 2

1 small head butter or Boston lettuce, torn into small pieces
1 large tomato, sliced into large sections
2 tablespoons apple cider vinegar
2 tablespoons olive oil
1 teaspoon honey
¼ teaspoon sumac (if you can’t find sumac, use a teaspoon of lemon zest)
pinch of salt
fresh pepper

Whisk the apple cider vinegar and olive oil together in a large bowl. Add the honey, sumac and salt and whisk a few more times.

Toss the lettuce in with the dressing then arrange on a plate. Add the tomatoes on top and pour over any remaining dressing. Serve with freshly ground pepper.

Other Uses for Apple Cider Vinegar

Better Beans: Add a tablespoon of apple cider vinegar to a large pot of black beans. The acidity elevates the flavor of the beans.

Chicken Marinade: To make a boring chicken breast come to life, marinate it in apple cider vinegar, salt and sugar. Add a half cup of apple cider vinegar to half a cup of water with a teaspoon of salt and sugar. Mix together and marinate small chicken breasts in the brine for two hours before baking.

Quick Pickles: Slice a Persian cucumber into paper-thin pieces and add to a mason jar with 1 cup of apple cider vinegar, 1 teaspoon salt, 1 teaspoon dill seeds and ½ teaspoon sugar. Let it sit for 4 hours in the fridge and serve.
