These salsa recipes embody summer and the flavors that are sure to satisfy your palate. Be sure to pair each of them with your favorite tortilla chip, opting for baked, veggie or whole-grain chips whenever possible. You can also use each of the salsas as a light complement to chicken or fish tacos. They are perfect for summer protein-based meals, even for vegetarian protein-centric ones.

1. Blueberry Pineapple Salsa

Serves about 8

Ingredients:

  • 2 cups fresh blueberries
  • 1 cup diced pineapples
  • 1 jalapeno pepper, seeded and minced
  • Juice of 1 lime
  • ½ teaspoon lime zest
  • Handful of fresh cilantro, finely chopped
  • ½ red onion, finely chopped
  • Sea salt to taste

Directions: Add all ingredients to a bowl and toss until evenly combined.

2. Roasted Tomatillo Salsa

Serves about 8

Ingredients:

  • 6 tomatillos
  • 1 white onion, finely chopped
  • 2 jalapenos, seeded and minced
  • Juice from 2 limes
  • Handful of fresh cilantro, finely chopped
  • 1 garlic clove, minced
  • Sea salt and pepper to taste

Directions: Remove the outer papery covering from the tomatillos. Slice them in half and place them on a baking dish. Broil for 10 minutes, or until charred. Transfer them to a food processor. Add in the remaining ingredients and process until smooth. Refrigerate overnight to allow the flavors to marry together.

3. Watermelon Salsa

Serves about 10

Ingredients:

  • 2 cups finely chopped watermelon, seeded
  • 1 cucumber, finely chopped
  • ½ red onion, finely chopped
  • ½ red bell pepper, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • Handful of fresh mint, finely chopped
  • 2 tablespoons honey or maple syrup
  • Juice of 1 lime

Directions: Add all ingredients to a bowl and toss until evenly combined.

4. Grilled Peach Salsa

Serves about 5

Ingredients:

  • 4 firm peaches
  • ½ red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • Juice of 1 lime
  • Handful of fresh cilantro, finely chopped
  • 1 tablespoon maple syrup
  • 1 tablespoon extra-virgin olive oil
  • Sea salt and black pepper to taste

Directions: Cut the peaches in half and grill for 3 minutes on both sides. Let cool and then chop. Add the remaining ingredients and toss until evenly combined.

5. Roasted Corn Salsa

Serves about 4

Ingredients:

  • 1.5 cups frozen corn
  • ½ red bell pepper, finely chopped
  • Juice of 2 limes
  • 1 Roma tomato, finely chopped
  • Handful of fresh cilantro, finely chopped
  • Sea salt and black pepper to taste

Directions: Spread the corn on a baking sheet and place in the oven. Broil for 10 minutes or until lightly brown. Remove and add to a bowl. Add the remaining ingredients and toss until evenly combined.
