Figs are most often eaten in their dried form. And while dried figs are most certainly delicious and nutritionally dense, they simply cannot beat the succulence and overall satisfaction offered by fresh figs. Unfortunately, fresh figs aren’t utilized as often in the American kitchen as they should be; availability is still not so widespread and getting hands on truly ripe and ready figs is even more rare. But when you do have access to fresh figs, and good ones at that, it’s important to know of all the wonderful snacks, desserts and other dishes you can concoct in the comfort of your very own kitchen, especially when they are in season (that’s now!).

1. Fig & Goat Cheese Panini

Serves 1

Ingredients

  • 2 slices multi-grain bread
  • 2 ounces soft goat cheese
  • 1 tablespoon chopped almonds
  • 1 teaspoon honey
  • 2 fresh figs, sliced

Directions

In a small bowl, mix together the goat cheese, almonds and honey. Stir until evenly combined. Spread the mixture on one side of each bread slice. Spread the sliced figs atop the goat cheese spread on one of the bread slices. Place the other piece of bread, goat cheese side down, atop the fig layer and place the sandwich in a Panini press or under a heavy weight in a heated skillet. Cook until the bread is slightly browned and the cheese has melted.

2. Fig Greek Yogurt

Serves 1

Ingredients

  • 1 large, lush fig
  • ½ cup Greek yogurt
  • 1 tablespoon chopped walnuts

Directions

Slice two cuts, diagonally along the center of fig, making sure not to cut through the bottom edge. Pull out the four corners of the fig, making a bowl-like center. Scoop the yogurt into the center of the fig and top with chopped walnuts.

Fresh Fig Bars

Makes 15-20 bars

Ingredients

For the base:

  • 1.5 cups rolled oats
  • 1 cup whole-wheat flour
  • 1 cup spelt flour
  • 1 cup turbinado sugar
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 6 tablespoons water mixed with 2 tablespoons ground flaxseeds
  • 1.25 cups almond milk
  • 1 large extra-ripe banana, mashed

For the topping:

  • 2 cups fresh figs
  • 2 tablespoons maple syrup
  • 1/4 cup orange juice
  • 1/3 cup chopped pecans
  • 3 tablespoons coconut oil, softened
  • 1 tablespoon turbinado sugar
  • 1 teaspoon lemon zest

Directions

 Preheat the oven to 375 degrees Fahrenheit. Lightly grease a high-rimmed baking sheet with coconut oil or non-stick cooking spray.

In a small bowl, combine the water and flax seeds. Stir and set aside for 2-3 minutes. In a large bowl, combine the oats, flours, sugar, baking powder, sea salt, and cinnamon. In a separate bowl, whisk together the vanilla, flaxseed “egg”, almond milk, and banana. Fold the wet ingredients into the dry ingredients and mix until evenly combined. The mixture should be thick but still pourable. Add more almond milk if too thick. Pour into the pan and spread evenly with a spatula.

Slice the figs into 1/4-inch thick pieces and toss in a bowl with the orange juice and maple syrup until all slices are evenly coated. Evenly distribute the fig slices across the top of the batter in the pan. Pour excess orange juice and maple syrup mixture evenly atop the batter as well.

In a small bowl, mix the pecans, coconut oil, sugar, and lemon zest. Mash together with the flat end of a fork and piece evenly over the batter.

Pop into the oven for about 25 minutes, or until lightly browned and the center is cooked.

4. Vanilla Fresh Fig Chia Jam

Makes about ¾ cup

Ingredients

  • 6 fresh figs
  • ½ teaspoon vanilla extract
  • 2 teaspoons coconut sugar
  • 2 teaspoons chia seeds

Directions

Remove the stems from the figs and place them into a food processor or blender. Blend until smoothie and forms a paste. Transfer to a bowl and stir in the remaining ingredients. Transfer to a mason jar and store in the fridge for at least 30 minutes, or until the mixture has set and resembles jam with gel-like consistency.
